Cloud Bread

What can I say about cloud bread…. it’s a celiacs dream!!!

It tastes like bread and it’s not dry and disgusting like most gluten free breads, plus it’s made from eggs and yogurt so I like to think of it as healthy and full of protein

(no idea if that’s true but the thought of it makes me feel better when I eat about 4 of these)

Its the simplest of ingredient lists

3 eggs divided

3 tbsp of either Greek yougurt or cream cheese

1/8 tsp cream of tartar

Mix the egg whites and the cream of tartar till stiff peaks form… Or a little hula girl… Am I the only one who can see that 😳

 

 

In a large bowl mix the egg yolks and yogurt or cream cheese until well combined and smooth

 

Very, very slowly mix in the egg whites, don’t rush this step, mix in a spoonful at a time

You want to have as much air in the egg whites as possible to make your cloud bread fluffy and cloud-like

 

Divide the mixture into 6 equal portions, 1/2 inch thick on a baking tray lined with either a silpat mat or parchment paper (don’t know why I don’t have a photo of this but you get the idea lol)

Bake for 30 minutes until lightly browned and move immediately to a wire rack and leave to cool for at least 1 hour

(excuse the photo, I could resist trying a bit before I snapped a photo hehe)

You can keep these in an airtight container in the fridge for up to 1 week

Ingredients:

  • 3 Eggs, divided

Directions:

  • Preheat oven to 150°C/300°F
  • Line a baking tray with parchment paper or Silpat mat
  • 
Mix egg whites till stiff peaks form
  • In a large bowl mix egg yolks and yogurt till smooth
  • Gently fold in the egg whites a spoonful at a time
  • Divide mixture into 6 equal portions (1/2” thick)
  • Bake for 30 minutes until lightly browned
  • Immediately move to wire rack
  • Cool for at least 1 hour
